All buttons of the Family Model tools will be enabled only when a family model is made current in the Revit window.
The Editor window in the Material Organizer command group of Family Model tools of Revit Family Organizer allows users to edit all properties of all materials in the current family model in a single nice place.
Each cell can be modified at will if it's writeable. After the OK button is pressed, all changes will be sent back to the family model. Otherwise, the Cancel button can be clicked to quit the dialog without doing anything.
All of these can be exercised in the free trail edition of Revit Family Organizer.
